Every deploy.resources.limits.memory in the services compose templates becomes a role default (<role>_memory_limit; exporters and watchtower per service). Defaults equal the current literals, so the rendered compose files are unchanged apart from quoting. After the OVH cutover, raise individual limits in inventory/host_vars/services.yml only (Linode and staging keep the small ones). Reservations stay literal.

Touches roles/** so staging-validate runs on merge.

Each compose limit is now <role>_memory_limit (exporters/watchtower: per service), default
= today's literal, so nothing changes. Raise per host in host_vars after the OVH cutover.
